The fresh yeast flakes from the rotating vacuum filter (see also Production) are sold as well. They are packed in 25 kg bags. This form stimulates solubility in water and is therefore suitable for large and medium-sized bakeries which prefer the specific characteristics of crumb yeast.

Bagged yeast will keep for 4 weeks when stored refrigerated at 4 to 5 °C. Never keep the yeast too warm, as it will be activated too quickly, resulting in loss of rising power.

Bagged yeast is availabale in bags of 25 kg.
